A TRIO of Western Aus- tralia’s talented chefs prepared a creative and confident feast for 90 of their peers when Pork- Star hit Perth earlier this year.
Young George host- ed the event, with chef Melissa Palinka teaming up with Alia Glorie from Billie H and Amy Hamil- ton from Liberte.
The menu showcased the three chefs’ styles and Western Australian pro- duce, utilising a wide va- riety of pork cuts.
Starters from Billie H head chef Alia included rolled chap, lime pickle and apple, as well as crispy pig’s ear, corn pud- ding, and fried tail, to- mato peach jam.
Travelling from Albany for the event, Liberte’s Amy turned out an en- trée of pig skin noodles, yabbies, pork belly, water- cress, garlic and chilli.
Comfortable in her own kitchen, Melissa from Young George took charge of the mains, in- cluding wood-roasted pig head and shoulder, and smoked tongue and jowl with fermented fennel, yo- ghurt, peach and gochu- jang dressing, crispy pig’s ear and red mustard.
The three chefs each prepared a dessert, with vanilla porky fudge squares, a Snickers bacon bar and a fried milk bun, pig jam and cinnamon myrtle sugar satisfying the sweet tooths.
PorkStar celebrates in- dustry women
Women from across the hospitality sector show- cased their skills at the Women in Hospitality/ PorkStar Autumn Cookout.
The event at Porteno Events in Sydney’s Surry Hills highlighted female chefs, butchers, pig farm- ers, brewers and distillers while serving up a pork feast.
PorkStar chefs Alex Herbert and Claire Van Vuuren roasted a medi- eval barbecue, with piggy delights from Alana Sap- well of St Peter and a handmade charcuterie by Jacqui Challinor from No- mad and Julianne Lever from Julianne’s Kitchen.
Butcher and sausage queen Chrissy Flanagan served up her artisan sau- sages, while brews and spirits came from female brewers and distillers, all while a rockabilly band played on.
PorkStar’s Kylie Roberts said, “This event contin- ued our support for Wom- en in Hospitality, but also offered guests that Pork- Star opportunity, which showcases the versatility of pork and the creativity of our chefs.”
PorkStar is a proud part- ner of the WOHO pro- gram, which has a mis- sion to inspire, recruit and retain more females throughout the hospitality industry.
